Vegetable Pilau

Ingredients (6 servings)

2 tbsp olive oil
1 large leek or onion, sliced
1 clove crushed garlic (optional)
1 tsp ground cinnamon
1 tsp ground cardamom
1 tsp grated fresh ginger root
1 tsp turmeric
100 g cauliflower florets
100 g frozen peas
175 g rinsed basmati rice
300 ml water
1 tsp salt
50 g raisins

Heat the oil in a large frying pan and cook the onions until they are golden. Then add the spices and fry for 1 minute. Add vegetables and stir for 1/2 a minute, then add rice and water and salt. Add water and salt and bring to boil. Turn the heat down, cover the pot tightly and let simmer for 15 - 20 minutes until all the water is absorbed.
